Made the way my Zia Mimi taught, and therefore more lightly breaded than the typical American recipes, this Eggplant Parmesan is a perfectly balanced combo of eggplant, tomato & cheese.

Served with Homemade Garlic Bread & a fresh salad full of locally & regionally sourced veggies with our Maple Balsamic dressing,

This is one of those soups that tastes like the best parts of childhood to me; cozy, warm & comforting. Pretty much summed up by the name, the featured ingredients are nestled in a light cream broth for a classic and satisfying soup.
