Potato Leek Soup
with Hearty Dinner Rolls
A telltale sign of spring on our property is the appearance of “wild leeks” - also known as ramps - the small wild onions from which the Winooski gets its name. We are blessed to have a large enough patch to sustainably harvest some each year, and this is one of my favorite ways to show them off - in a local-as-possible combo of Jericho-grown potatoes, Jericho-harvested leeks & cream from local cows (including those at Davis farm right here in Jericho). This combo makes an airy, oniony & creamy soup - one of my springtime favorites!
Served with Cloverleaf Rolls - made from the same dough as our Maple Oatmeal Bread. A hearty & chewy accompaniment to any soup!
